U. of Oklahoma Opens All-Healthy Retail Outlet

University of Oklahoma Housing & Food Services has opened a new all-healthy/all-the-time dining outlet in the school’s Oklahoma Memorial Union, reports the Norman Transcript. Called The Laughing Tomato, it menus ready-made soups, salads and wraps made as much as possible using local products. It will also emphasize vegetarian and vegan selections like roasted edamame, tabouli and hummus. The operation uses sustainable preparation practices as much as possible and selections are sold in compostable containers. Laughing Tomato replaces a Mexican concept called Taco Mayo in the food court, which also includes Quiznos, Wong Key, Chick-Fil-A and Sbarro branded stations.
